Christmas Eve Inspiration with The Phoenix

We’ve teamed up with food stylist Bianca Davies to bring you some festive recipes, paired with Krone MCC.

For Christmas Eve: Oysters with Bubbly Vinaigrette paired with The Phoenix.

Recipe: Oysters with Bubbly Vinaigrette

2 dozen fresh oysters
2 large shallots
60ml red wine vinegar
60ml Krone The Phoenix MCC 
Freshly ground black pepper

Finely dice the shallots. Add them to a bowl with the red wine vinegar, MCC and freshly ground black pepper. Mix well and leave in the fridge for at least an hour before serving.

Shuck the fresh oysters and preserve the liquid in the shell. Serve the oysters lightly dressed with the bubbly mignonette dressing.
